IN A PINCH?

This past weekend was a total whirlwind. The parties were all successful but they left me completely pooped. I am birthdayed out and mine is tomorrow!   I had full intentions of making clean eating, pumpkin spice cupcakes and a trifle for the baby shower but time got the best of me and I ended up having to come up with something creative in a pinch.

Sunday morning I went to Publix  and bought last minute fruit and pumpkin pies. I  arranged grapes and oranges in a really pretty glass bowl in lieu of the trifle.  Instead of the pumpkin spice cupcakes, I made pumpkin pie bites.

For the pumpkin pie bites, I purchased two ready made pumpkin pies from the deli and ready whip from the refrigerated section. I ran to Joann's Crafts and bought round fondant cutters as well as some pretty gold mini paper cups.

 
 I used the fondant cutter to make the basic shape and then took a butter knife to finish the cut, making sure to get all of the crust. It came up beautifully.
 
I placed them in paper cups, squirted a dab of ready whip on and then used my cinnamon grinder to add some fresh cinnamon to the top. This step added to the presentation and gave them a little extra flavor.



This was super easy and they looked great on my glass Fostoria platter. If you are like me, in a constant whirlwind, put this in your back pocket for the holidays. You will have something ready to whip out when you are in a pinch! It's much better than just throwing out the pie in the plastic container!
